Ingredients

2 pounds of Beef meaty bone

2 Scallion stalks

2 Minced garlic cloves

1 cup of Chopped carrot

1 cup of Finely chopped pearl onion

1 cup of Finely chopped red pepper

¼ Finely chopped scallion

2 tablespoons of Chopped cilantro

8 Tender corn slices

2 teaspoons of Olive oil

1 Large cabbage leaf divided into four pieces

6 cups of Water

1 pinch of Salt

1 pinch of Pepper

Preparation

Step 1 : In a pot, add water along with the beef bone, removing the foam that forms.

Step 2 : Then add the two scallion stalks and the garlic cloves, along with the corn.

Step 3 : Cover the pot and let it boil until cooked.

Step 4 : Once ready, remove from heat and strain the broth into another pot.

Step 5 : Return the broth to the stove and set aside the meaty bone and corn.

Step 6 : Sauté the pearl onion, carrot, and red pepper in olive oil, then add to the broth.

Step 7 : Next, add the corn and the meaty bone, cooking a few minutes until tender.

Step 8 : Add the cabbage pieces, salt, and pepper.

Step 9 : Finally, remove from heat and serve the dish, garnished with chopped cilantro and white onion.
