The torrejas broth is a very popular soup in the Andean region of Ecuador, especially common in the mountain areas of the country.
This dish is characterized by its unique flavor and the inclusion of «torrejas», which are fried dough pieces added to the soup.
Torrejas Broth
Ingredients
2 pounds of Beef ribs
6 tablespoons of Achiote
4 Garlic cloves
2 Red onions
1 Green pepper
3 liters of Water
2 Carrots
2 Corn on the cob
2 Medium-sized potatoes
3 Cabbage leaves
Dried oregano
1 White onion stalks
1 Egg
2 Breads
1 cup of Milk
2 tablespoons of Achiote
½ Red onion
1 White onion stalks
1 Green or red pepper
1 Egg
Cilantro
1 pinch of Salt
1 pinch of Pepper

Preparation
Step 1 : To prepare the torrejas, mix all the ingredients for the dough and then fry in hot oil until golden brown.
Step 2 : In a large pot, brown the beef ribs with achiote, garlic, onions, and green pepper.
Step 3 : Next, add water, carrots, corn, potatoes, cabbage, pepper, salt, cumin, and dried oregano.
Step 4 : Cook this mixture on low heat for approximately 2 hours.
Step 5 : Once ready, add the fried torrejas to the broth before serving.
Step 6 : This delicious dish can be accompanied by fried green plantains.
