Salty Morocho Soup
Ingredients
1 cup of Chopped white onion
1 cup of Cooked morocho (keep the liquid)
2 cups of Milk
1 cup of Shredded Ecuadorian cheese
2 tablespoons of Achiote oil
1 cup of Cream
3 Medium chopped potatoes
1 tablespoon of Chopped garlic
1 tablespoon of Chopped cilantro
1 tablespoon of Chopped parsley
Salt, pepper, cumin
Preparation
Step 1 : In a pot, heat achiote oil and sauté the white onion with garlic for about 2 minutes.
Step 2 : Add a pinch of cumin, salt, and pepper.
Step 3 : Then add the potatoes, parsley, and cilantro, and sauté for 3 minutes.
Step 4 : Next, add the milk and bring to a boil.
Step 5 : Then add the cream.
Step 6 : Incorporate the morocho along with its cooking water, stirring constantly so the soup cooks properly. It will be ready when the potatoes are tender.
