Ingredients

6 Green plantains, peeled and cubed

2 tablespoons of Oil

1 Onion, diced

2 Garlic cloves, crushed

120 grams of Shredded quesillo or mozzarella cheese

½ cup of Milk or heavy cream

½ cup of Chopped cilantro or culantro

8 cups of Water

1 pinch of Salt

Preparation

Step 1 : To prepare the Repe, start by heating the oil in a pot and sautéing the garlic and onion.

Step 2 : Then add the 8 cups of water and bring to a boil.

Step 3 : Next, add the plantains and cook over medium-high heat for 20 minutes, stirring occasionally until the plantains soften.

Step 4 : Afterward, slightly mash the vegetables to thicken the broth.

Step 5 : Add the shredded quesillo, milk, cilantro, and salt.

Step 6 : Finally, remove from heat and serve the Repe accompanied by avocado, cheese, and chili pepper.
