Quinoa and Meat Soup
Ingredients
1 pound of Savory ribs
150 grams of Quinoa
5 tablespoons of Achiote
1 tablespoon of Chopped garlic
2 White onion stalks
½ Red onion
2 Celery stalks
2 ½ liters of Water
1 pound of Potato
2 Cabbage leaves
1 cup of Milk
2 tablespoons of Peanut paste
Cilantro or parsley
1 pinch of Salt
1 pinch of Pepper

Preparation
Step 1 : In a large pot, place the ribs and cover with water, boiling for 30 minutes.
Step 2 : Then add the washed and drained quinoa, achiote, chopped garlic, white onion, red onion, chopped celery, cabbage leaves, and water, cooking over medium heat for 20 minutes.
Step 3 : Add the cubed potato and cook until tender.
Step 4 : Add milk, peanut paste, chopped cilantro or parsley, salt, pepper, and cumin to taste, letting it boil for another 10 minutes, stirring occasionally.
Step 5 : Taste and adjust seasoning if necessary, then serve hot.
