It is sautéed with garlic, cumin, and oil until soft.

Then, broth is added and it is cooked over low heat until the pumpkin is tender.

Ingredients

1 Nice-sized pumpkin

3 tablespoons of Oil

1 Onion

3 Crushed garlic cloves

1 teaspoon of Ground cumin

4 Tomatoes

6 cups of Chicken or vegetable broth

1 pinch of Salt

1 pinch of Pepper

Preparation

Step 1 : To prepare the pumpkin cream, start by peeling the pumpkin and removing the seeds, then cut it into small pieces.

Step 2 : Also peel and finely chop the onion and tomatoes.

Step 3 : In a pot, heat the oil and add the onion, garlic, cumin, and tomatoes.

Step 4 : Sauté this mixture for about 5 minutes until the onions are soft.

Step 5 : Then, add the chicken or vegetable broth and wait for it to boil.

Step 6 : Next, add the pumpkin pieces to the pot and wait for it to boil again.

Step 7 : Reduce the heat and cook over low for approximately 30 minutes, or until the pumpkin pieces are soft.

Step 8 : Once ready, remove from heat and let cool enough to blend the mixture.

Step 9 : Blend the preparation until you get a purée or thick mixture, to which salt and pepper can be added to taste.

Step 10 : If necessary, reheat the cream.

Step 11 : To serve the pumpkin cream, you can add crumbled cheese, chopped scallions, chorizo, or chicharrones.

Step 12 : Enjoy your meal!
