Mote Pata
Ingredients
2 cups of Pork cut into small cubes
1 cup of Chorizo
½ cup of Bacon
2 cups of Cooked cornmeal (mote)
2 tablespoons of White onion
2 Crushed garlic cloves
½ cup of Cornmeal paste
1 liter of Milk
2 tablespoons of Achiote oil
3 cups of Water
1 pinch of Salt
Preparation
Step 1 : Cook the pork, chorizo, and bacon in a pot.
Step 2 : Then, remove them from the broth and let them cool.
Step 3 : In a skillet, prepare a refried sauce with achiote oil, garlic, white onion, and salt.
Step 4 : Add this refried mixture to the broth where the meats were cooked.
Step 5 : Add the cornmeal, corn, and milk to the broth, cooking and stirring until it thickens.
Step 6 : If the mixture becomes too thick, you can add hot water as needed.
Step 7 : Finally, add the meats back in and cook for an additional 5 minutes.
Step 8 : Once ready, remove from heat and enjoy!
