Ingredients

1 pound of Beef ribs

1 cup of Chopped yellow carrots

1 White onion stalk

1 Crushed garlic clove

2 Green plantains

½ cup of Ground meat

1 Cooked egg, cut into small squares

¼ cup of Chopped red onion

½ Onion

½ Bell pepper

5 cups of Water

2 Cut corn cobs

Annatto, salt, pepper, and cumin

¼ cup of Chopped cilantro

2 Large cabbage leaves, torn into pieces

Preparation

Step 1 : In a pot, place the ribs and bring to a boil, removing any foam that forms.

Step 2 : Add the white onion stalk, garlic, half of the chopped red onion, bell pepper, salt, pepper, and cumin.

Step 3 : Once cooked, remove the onions and pepper.

Step 4 : Cook the diced carrots until tender.

Step 5 : In a separate skillet, fry the ground meat in small pieces, chopped onion, carrots, and egg with a bit of annatto.

Step 6 : Grate the green plantain, add annatto, and knead until reaching the right consistency.

Step 7 : Form small balls and fill them with the previous sauté mixture.

Step 8 : After 30 minutes of boiling the broth, add the corn pieces.

Step 9 : Carefully add the filled meatballs to the broth, avoiding breaking them, along with the remaining sauté.

Step 10 : Wait until the meatballs float to the surface of the broth.

Step 11 : Check that the corn and meatballs are cooked through, add cilantro and torn cabbage leaves, simmer for a few minutes, then remove from heat.
