Ingredients

1 kilogram of Chopped potatoes

1 cup of White onion

1 cup of Fresh cheese

½ cup of Diced carrots

2 cups of Milk

2 teaspoons of Butter

Corn kernels

Garlic

Cilantro or parsley

Annatto

1 pinch of Salt

1 pinch of Pepper

Preparation

Step 1 : In a pot, add the butter, garlic, and white onion, and sauté until the onion becomes transparent.

Step 2 : Add the potatoes and stir well.

Step 3 : Then incorporate the carrots, corn, salt, and pepper to taste, and cook for 5 minutes.

Step 4 : When the potatoes are slightly transparent, add the milk and enough water to cover the potatoes.

Step 5 : Bring to a boil and add a touch of annatto, chopped cilantro or parsley, salt, and pepper to taste.

Step 6 : Let it cook until the potatoes fall apart.

Step 7 : Once thickened, add the cheese and remove from heat.

Step 8 : Serve with avocado slices and chopped cilantro.
