Fish Chupe

Ingredients

2 pounds of Filleted fish

2 pounds of Yellow potato

1 cup of Milk

½ pound of Cheese

1 Corn on the cob

1 cup of Broad beans

¼ cup of Vegetable oil

1 teaspoon of Achiote

1 White onion stalk

1 Cilantro sprig

2 tablespoons of Garlic seasoning

1 tablespoon of Butter

1 cup of Flour

1 Cabbage leaf

½ Carrot

½ Bell pepper

1 pinch of Salt

1 pinch of Pepper

Preparation

Step 1 : To prepare this delicious soup, start by chopping the carrot into cubes and the white onion into thin pieces.

Step 2 : Next, cut the corn on the cob into pieces and the stalk into small chunks.

Step 3 : Then, in a pot, sauté the white onion with achiote, butter, and half a teaspoon of garlic seasoning.

Step 4 : Add two potatoes previously cut into small cubes to the soffrito and wait until the onion is translucent before adding one and a half liters of water.

Step 5 : The remaining potatoes should be cut into larger cubes to prevent them from disintegrating during cooking and are added to the pot along with the carrot.

Step 6 : Meanwhile, season the fish with garlic and salt to taste, coat with flour, and fry in a pan with oil until golden.

Step 7 : Once done, add the fried fish to the soup pot, along with the cabbage, cheese, milk, cilantro, and a slice of bell pepper.

Step 8 : Add salt to taste and serve immediately.
