In a deep pot, place the chicken pieces along with the water.
During cooking, remove the foam that forms on the surface.
Add salt, onion, pepper, garlic, and herbs to the pot.
Once cooked, remove the onion and pepper.
Then, continue cooking over low heat with the pot covered until the meat is tender.
If the broth evaporates too much, add hot water and check the salt level.
Add cassava when the meat is soft.
Finally, remove the pot from heat and add finely chopped white onion and cilantro.

1 Creole chicken
2 ½ liters of Cold water
1 Onion halved
1 Chopped white onion stalk
1 Pepper halved
4 Chopped garlic cloves
1 Finely chopped cilantro stalks
1 Medium peeled cassava cut into pieces
Oregano, cumin, and salt

Step 4 : Once the onion and pepper are cooked, remove them from the pot.

Step 6 : If the broth evaporates too much, add hot water and check the salt level.
Step 7 : Add the cassava once the chicken meat is completely tender.
Step 8 : Finally, remove the pot from heat and add finely chopped white onion and cilantro to finish the dish.
