Ingredients

1 kilogram of Chicken pieces

¾ cup of Uncooked rice

2 tablespoons of Oil or butter

1 Diced red onion

1 Diced bell pepper

6 Crushed garlic cloves

2 tablespoons of Finely chopped parsley

1 teaspoon of Dried oregano

1 teaspoon of Ground cumin

1 teaspoon of Ground annatto

8 cups of Water

2 Peeled and chopped potatoes

1 cup of Diced carrots

2 tablespoons of Finely chopped cilantro

1 pinch of Salt

1 pinch of Pepper

Preparation

Step 1 : To prepare this delicious chicken broth, it's important to start by soaking the rice in water for 30 minutes.

Step 2 : Then, in a large pot, heat the oil or butter and add the onion, garlic, bell pepper, parsley, oregano, cumin, annatto, salt, and pepper.

Step 3 : Cook this mixture for 10 minutes, stirring frequently to blend the flavors well.

Step 4 : Once the ingredients are well cooked, add the water and wait for it to boil.

Step 5 : At this point, add the chicken pieces and cook everything over medium heat for 30 minutes.

Step 6 : Then, add the soaked rice and potatoes, cooking for 45 minutes over low heat, stirring occasionally to prevent sticking at the bottom.

Step 7 : For an extra special touch, add the carrots and cook for 10 minutes until tender.

Step 8 : Once ready, remove from heat and add the cilantro to bring freshness to the dish.

Step 9 : Finally, serve the chicken broth accompanied by avocado and hot sauce, ready to enjoy this delicious dish!
