Caldo de Pata
Ingredients
2 kilograms of Beef trotters cut into large pieces
14 cups of Water
4 Whole garlic cloves
½ Diced red onion
5 Whole cilantro sprigs
5 Whole parsley sprigs
600 grams of Peeled yucca
2 tablespoons of Oil
1 teaspoon of Dried oregano
4 cups of Cooked maize (mote)
4 tablespoons of Peanut butter
1 cup of Milk
½ Diced white onion
2 Crushed garlic cloves
1 teaspoon of Ground cumin
1 teaspoon of Ground achiote
½ A handful of finely chopped cilantro
1 A handful of finely chopped scallions
1 pinch of Salt
1 pinch of Pepper
Preparation
Step 1 : To start, place the beef trotters in a large pot and add the whole garlic cloves, red onion, cilantro sprigs, parsley sprigs, a dash of cumin, salt, pepper, and water.
Step 2 : Bring it to a boil, then reduce the heat and simmer for 3 hours.
Step 3 : After this time, add the yucca and cook for about 30 more minutes, until the yucca and beef trotters are tender.
Step 4 : Once done, remove from heat, strain the broth, and set aside for later.
Step 5 : Cut the yucca into medium-sized pieces and remove the bones from the trotters, chopping the meat into small pieces.
Step 6 : In a separate pot, heat the oil over medium heat and add the white onion, crushed garlic, oregano, achiote, cumin, salt, and pepper.
Step 7 : Then, mix the peanut butter with the milk and add it to the pot, stirring until dissolved.
Step 8 : Next, add the beef from the trotters, yucca, and cooked maize to the broth, and simmer for approximately 25 minutes.
Step 9 : Finally, to serve the Caldo de Pata, sprinkle chopped cilantro and scallions on top, and accompany it with white rice, avocado, and aji.
