Broad Bean Locro
Ingredients
4 cups of Shelled broad beans
2 tablespoons of Oil
4 Crushed garlic cloves
1 Diced white onion
2 Peeled, seedless, and chopped tomatoes
½ tablespoon of Ground cumin
½ teaspoon of Ground annatto
1 teaspoon of Ground chili or chili powder
3 Peeled and chopped potatoes
6 cups of Water or chicken broth
½ cup of Milk
3 Lightly beaten eggs
1½ cup of Crumbled cheese
3 tablespoons of Finely chopped cilantro
1 pinch of Salt
Preparation
Step 1 : To prepare this delicious recipe, first heat the oil in a large skillet.
Step 2 : Then add the onion and cook for 5 minutes.
Step 3 : Next, add the crushed garlic and cook for 2 minutes.
Step 4 : Afterward, add the chopped tomatoes, cumin, annatto, chili, and salt.
Step 5 : Mix everything well and cook for 3 minutes.
Step 6 : Then, add the potatoes and water or broth, and wait for it to boil.
Step 7 : Add 2 cups of beans and reduce the heat, simmering for about 25 minutes until the potatoes are tender.
