This delicious preparation, full of tradition and flavor, is a thick and comforting stew that combines various grains, fish, and flavors that honor the typical ingredients of the region.
Traditional Fanesca
Ingredients
1 pound of Salted dried cod
4 tablespoons of Achiote
4 tablespoons of Chopped garlic
1 cup of Chopped red onion
½ cup of Chopped white onion
1 cup of Chopped green bell pepper
½ cup of Corn paste
1 cup of Chopped plantain
2 cups of Diced squash
Dried oregano
1 can of Mote (large hominy)
1 can of Canary bean
1 can of Pink bean
1 can of Red bean
1 can of Baby lima beans
1 can of Chickpeas
1 can of Sweet corn
Hearts of palm
1 Fried ripe plantain bundle
8 Mini empanada discs
200 grams of Cheese
1 Avocado
3 Boiled eggs
Chopped cilantro
1 pinch of Salt
1 pinch of Black pepper
1 pinch of Cumin
Preparation
Step 1 : To prepare the Fanesca, start by soaking the cod overnight in water to desalinate it.
Step 2 : Then, cook the squash and blend it together with the onion, pepper, garlic, achiote, and corn paste to obtain a thick sauce.
Step 3 : Once the sauce is ready, add it to a large pot along with the canned grains, shredded cod, and seasonings.
Step 4 : Cook on low heat for a few hours to meld the flavors.
Step 5 : Finally, serve the Fanesca accompanied by hearts of palm, fried plantain, empanadas, cheese, avocado, boiled eggs, and fresh cilantro.
