Tigrillo
Ingredients

4 Green plantains
4 Eggs
150 grams of Fresh cheese
1 tablespoon of Achiote
1 Chopped onion
Cilantro leaves
Grated cheese
1 pinch of Salt
1 pinch of Pepper
Preparation
Step 1 : Cook the green plantains in boiling water until soft, peel them, and grate them carefully.
Step 2 : Dissolve the achiote tablespoon in a few tablespoons of oil and mix this paste with the grated plantains.
Step 3 : In a skillet, sauté the finely chopped onion until golden and fragrant.
Step 4 : Add a bit more oil if necessary to the skillet with the onion, then add the grated plantains, cooking them over medium heat and stirring occasionally until tender.
Step 5 : Beat the eggs in a bowl and incorporate them into the mixture in the skillet, mixing well until they start to set.
Step 6 : Then add the crumbled fresh cheese and cook until achieving a creamy and well-integrated mixture.
Step 7 : Serve the Tigrillo hot, decorated with grated cheese and cilantro leaves for a fresh and aromatic touch.
