Ingredients

½ pound of Chicken breast
1 pound of Beef ribs
1 pound of Pork meat
1 pound of Smoked chorizo
4 Green plantains
1 Red onion (paiteña)
1 Ripe tomato
2 Green peppers
1 tablespoon of Annatto
1 tablespoon of Oil
3 Garlic cloves
3 Chilangua or basil leaves
1 tablespoon of Oregano
1 pinch of Salt
Banana leaves
Lemon
1 pinch of Pepper
Preparation
Step 1 : The recipe starts by chopping the chorizo and separating only the chicken breast meat, then cutting it into small pieces.
Step 2 : Next, finely dice the red onion, peppers, and tomato into brunoise or very small cubes.
Step 3 : Proceed to crush the garlic and chop the chilangua or basil leaves.
Step 4 : In a skillet, prepare a sauté with annatto, crushed garlic, onion, peppers, and tomato.
Step 5 : Add salt and pepper to taste, then incorporate the pork meat in pieces, mixing well with the sauté.
Step 6 : Then, add the beef ribs in pieces, integrating them into the mixture.
Step 7 : It's time to thinly slice the plantains and add both the green plantains and chorizo to the skillet, mixing again.
Step 8 : Add the chopped chilangua or basil leaves and cover with banana leaves to finish cooking.
Step 9 : Finally, serve the cooked dish and optional a splash of lemon for a special touch.
