Ingredients

Shrimp Rice

1 kilogram of Washed shrimp without entrails (unpeeled)

2 teaspoons of Ground cumin

4 Crushed garlic cloves

4 Chopped garlic cloves

2 tablespoons of Oil

2 cups of Uncooked rice

3 tablespoons of Butter

1 Diced red onion

1 Diced pepper

2 Peeled and seedless chopped tomatoes

6 tablespoons of Finely chopped parsley

1 teaspoon of Ground achiote

½ cup of White wine

1 pinch of Salt

1 pinch of Pepper

Preparation

Step 1 : To prepare this delicious dish, first season the shrimp with salt, pepper, 1 teaspoon of cumin, and crushed garlic.

Step 2 : Then, let them rest for 1 hour in the refrigerator.

Step 3 : In a large pot, boil enough water and add the shrimp, boiling for 2 minutes.

Step 4 : Remove from the water and reserve 2¾ cups of the cooking liquid.

Step 5 : Peel the shrimp, reserving some unpeeled for later decoration.

Step 6 : Chop half of the shrimp and leave the other half whole.

Step 7 : In a pot for cooking rice, heat oil and add chopped garlic, cooking over medium heat for about 3 minutes.

Step 8 : Then, add the rice and mix well, adding the reserved 2¾ cups of shrimp cooking liquid.

Step 9 : Wait until it boils and reduce the heat.

Step 10 : In a large skillet, melt butter and add onion, pepper, tomatoes, half of the parsley, ground achiote, the remaining teaspoon of cumin, salt, and pepper.

Step 11 : Cook for 10 minutes, stirring occasionally.

Step 12 : Add white wine and cook for another 5 minutes.

Step 13 : Add this sauté and chopped shrimp to the rice that is cooking, letting it simmer until the rice is ready.

Step 14 : Next, add whole shrimp and mix well.

Step 15 : Adjust seasoning and sprinkle with the remaining parsley.

Step 16 : To serve, present the rice with unpeeled shrimp as a side dish, accompanied by avocado, pickled onion, tomatoes, and chili.

Step 4 : Prepare a sauté in another pan: melt butter and cook the onion, pepper, tomato, parsley, achiote, the rest of the cumin, salt, and pepper for 10 minutes, add wine and cook 5 more minutes.
