Roasted Guinea Pig with Potatoes
Ingredients

1 Peeled guinea pig
8 Crushed garlic cloves
1 tablespoon of Cumin
½ teaspoon of Achiote
1 kilogram of Peeled potatoes
8 tablespoons of Oil
2 Finely chopped scallion stems
1 Finely chopped red onion
1 pinch of Oregano
1 pinch of Ground pepper
1 tablespoon of Cilantro
1 pinch of Salt
Preparation
Step 1 : The guinea pig is seasoned with 5 garlic cloves, cumin, and salt, and left to rest overnight.
Step 2 : Then, 6 tablespoons of oil with achiote are heated in a skillet and used to baste the guinea pig.
Step 3 : The guinea pig is roasted over charcoal, pricking it to ensure even cooking.
Step 4 : In another skillet, 2 tablespoons of oil are heated and the onion, remaining 3 garlic cloves, scallions, cilantro, oregano, pepper, and salt are added and cooked for 5 minutes.
