Ingredients

3 kilograms of Pork leg with skin

1 cup of Beer

1 cup of Orange juice

1 teaspoon of Pepper

1 tablespoon of Cumin

1 tablespoon of Oregano

2 tablespoons of Salt

8 Crushed garlic cloves

2 Diced red onions

5 tablespoons of Achiote oil

1 Scallion

Preparation

Step 1 : To prepare this delicious dish, start by blending the scallion, diced red onions, salt, cumin, oregano, bell pepper, garlic, beer, and orange juice.

Step 2 : After processing for 3 minutes, set aside the mixture.

Step 3 : Next, use a knife to make deep cuts all over the pork leg.

Step 4 : Place the leg in a large lidded container and pour the reserved marinade to soak for 24 hours in the refrigerator.

Step 5 : The following day, remove the leg from the refrigerator and place it on a heat-resistant glass tray.

Step 6 : Bake at 200°C (392°F) for 30 minutes.

Step 7 : Then, remove from the oven and cover with the juices released by the meat and the achiote oil.

Step 8 : Cover with aluminum foil and bake again for an hour and a half.

Step 9 : Finally, remove from the oven, take off the foil, let it cool slightly, serve, and enjoy this exquisite dish.
