Ingredients

1 kilogram of Diced pork meat

1 pinch of Salt

1 tablespoon of Crushed garlic

2 tablespoons of Achiote oil

1 Red onion

1 Bell pepper

½ tablespoon of Cumin

1 Naranjilla

1 cup of Beer

1 pinch of Pepper

Preparation

Step 1 : Season the meat with salt, pepper, and crushed garlic.

Step 2 : Heat oil in a pot and add the meat, frying for 6 minutes.

Step 3 : Then, set the meat aside in another container.

Step 4 : In the same pot, add more oil, achiote, chopped onion, and bell pepper, stirring and adding a pinch of cumin.

Step 5 : Continue stirring for 2 minutes, then add chopped tomato and keep stirring.

Step 6 : Once the sofrito is well done, return the reserved meat to the pot and mix well with the sofrito.

Step 7 : In a blender, add 1 chopped Naranjilla and a large glass of beer, blend, and re-add to the pot with a little water.

Step 8 : Let it simmer over medium heat for 25 minutes until the pork is cooked.

Step 9 : Add salt, chopped cilantro, and cook for 5 more minutes.

Step 10 : Finally, turn off the heat and let it rest.

Step 11 : This dish is served with rice and avocado.
