Pork in Tamarind Sauce

Ingredients

3 pounds of Pork loin or pork shoulder

½ pound of Tamarind pulp

½ cup of Tomato sauce

1 cup of Beef or chicken broth

1 Yellow carrot

2 Garlic cloves

1 Rosemary sprig

2 tablespoons of Sugar or honey

Olive oil or avocado oil

1 pinch of Salt

1 pinch of Pepper

Preparation

Step 1 : Season the meat with salt and pepper and grill it, turning constantly for 45 minutes.

Step 2 : Cut the carrot into large pieces.

Step 3 : In a pot, place the sugar along with the carrot and rosemary, and let it boil over low heat until the caramel mixes well with the ingredients.

Step 4 : Add the tamarind pulp with a cup of water and boil for five minutes.

Step 5 : Then add the tomato sauce and cook for 10 minutes or until slightly thickened.

Step 6 : Finally, serve the meat accompanied by the tamarind sauce.
