In a skillet with achiote oil, sear the chicken thighs and set aside on a plate.
In the same skillet, add the onion, garlic, and ground chili, stirring well.
Place the chicken pieces back in, seasoning with salt and pepper.
Add water and cook covered for about 20 minutes.
Then add the ground peanuts, stir the ingredients, and cook over low heat for another 5 minutes.
Serve the chicken in its sauce, accompanied by rice and plantain slices.

4 Chicken thighs
1 Pearl onion chopped into cubes
⅓ cup of Toasted and ground peanuts
1 tablespoon of Ground garlic
1 tablespoon of Ground chili
1 ½ cup of Water
2 tablespoons of Achiote oil
1 pinch of Salt
1 pinch of Pepper
