Motepillo is a traditional Ecuadorian dish made with mote, which is cooked mature corn, and eggs.

Ingredients

2 pounds of Cooked mote

5 Eggs

cup of Milk

2 tablespoons of Lard with annatto

3 White onion stalks

½ pound of Cheese

Cilantro

Parsley

Preparation

Step 1 : In a hot skillet, melt the lard with the annatto.

Step 2 : Then, add the cooked mote and mix to integrate.

Step 3 : Next, incorporate the eggs and mix until obtaining a uniform preparation.

Step 4 : Subsequently, add chopped green onion, salt, and pepper to taste.

Step 5 : Add plenty of cheese and mix well.

Step 6 : Finally, serve the motepillo as a garnish or main dish, accompanied by tomato sauce if desired.
