Homemade Chicken Stew

The chicken stew is a traditional Latin American dish, full of flavors and aromas. With a base of golden chicken, tomato, garlic, onion, and pepper, this dish is slow-cooked until the flavors blend perfectly. To prepare the Chicken Stew, first wash, chop, and set aside the ingredients.

The chicken is fried in achiote oil and set aside.

In the same pot, sauté the vegetables, add the blended tomatoes, and cook for 30 minutes with the chicken.

Finally, add potatoes, yuca, and cilantro to serve with plantains, rice, and salad.

Ingredients

2 teaspoons of Pepper

3 tablespoons of Salt

6 tablespoons of Achiote oil

3 Tomatoes

3 tablespoons of Chopped cilantro

1 Green pepper

1 Red onion

2 Garlic cloves

220 grams of Yuca

220 grams of Potatoes

900 grams of Chicken pieces

Preparation

Step 1 : Begin by washing, chopping, and setting aside the garlic cloves, onion, and pepper.

Step 2 : Then, heat the achiote oil in a pot with the chicken and fry on both sides. Remove the chicken once cooked and set aside.

Step 3 : In the same pot used for the chicken, sauté the garlic, onion, and pepper for 5 minutes.

Step 4 : Next, wash the tomatoes, blend them, and add to the sautéed mixture.

Step 5 : Add the chicken back into the pot and cook over medium heat for 30 minutes with the lid on.

Step 6 : Meanwhile, wash, peel, chop, and cook the potatoes and yuca until tender.

Step 7 : After the 30 minutes of chicken cooking, add the potatoes and yuca to the pot.

Step 8 : Add the chopped cilantro, cook for another 5 minutes, and serve with plantains, a portion of rice, and salad.
