Ingredients

1 pound of Filleted fish (preferably croaker or golden)

3 Green plantains

½ pound of Peanut paste

2 tablespoons of Oil or achiote

2 Red onions

2 Chopped green peppers

2 tablespoons of Garlic

2 Chopped tomatoes

1 tablespoon of Finely chopped cilantro

2 liters of Fish consommé or water

Salt, pepper, and cumin

Preparation

Step 1 : To prepare this delicious dish, start by washing, peeling, and grating the green plantains, adding a little oil or achiote to prevent oxidation.

Step 2 : Next, finely cut the onions into small cubes and finely chop the tomatoes and peppers.

Step 3 : In a skillet, make a sauté with oil or achiote, adding the onions, peppers, garlic, tomato, salt, pepper, and cumin.

Step 4 : Once ready, remove the sauté from heat and mix with 4 tablespoons of peanut paste, reserving this mixture.

Step 5 : Then, cook the grated green plantain in fish consommé or water along with more than half of the sauté.

Step 6 : Add salt, cumin, and pepper to taste.

Step 7 : When it boils, add the remaining peanut paste and cook for 30 minutes, stirring constantly to blend the flavors.

Step 8 : Meanwhile, season the fish fillets with cumin, salt, and pepper.

Step 9 : In a clay pot, layer some of the green plantain mixture, arrange the fish fillets, and pour plenty of peanut sauce.

Step 10 : Finish with another layer of green plantain.

Step 11 : Place the casserole in a preheated oven at 180°C and bake until golden.

Step 12 : Finally, remove from the oven, add the chopped cilantro, and it's ready to enjoy this exquisite dish! Buen provecho!
