Ingredients

2 kilograms of Corvina

1 White onion

2 Red peppers

4 Tomatoes

1 Fresh coconut with pulp and water

20 milliliters of Lemon juice

50 milliliters of Orange juice

4 Garlic cloves

1 pinch of Cumin

1 pinch of Achiote

1 pinch of Cilantro

2 tablespoons of Oil

3 tablespoons of Fresh cilantro

1 pinch of Salt

Preparation

Step 1 : To prepare the fish encocado, start by placing the fruit juices, garlic, salt, and spices in a container and mix well to form a sauce.

Step 2 : Then, generously coat the fish pieces with this mixture and let them rest in the refrigerator for at least 4 hours.

Step 3 : In a preheated pan with oil, add the onion, tomatoes, peppers, and salt to taste.

Step 4 : Cook for a few minutes over low heat and then add the blended coconut.

Step 5 : Cook for another 15 minutes.

Step 6 : Add the fish pieces to the preparation and cook over low heat for about 20 minutes until cooked through.

Step 7 : When serving, sprinkle the dish with grated coconut and cilantro, and accompany with rice and fried ripe plantains.
