When preparing these exquisite fish breads, thinly slice the onion and pepper, dice the tomatoes, and grate the green plantains.

In a skillet with hot oil, sauté the onions and pepper, adding the garlic.

The preparation is divided into two bowls, season the fish fillets with lemon juice and set aside.

In a pot, place the fillets with part of the sauté and peanut paste, letting them rest off the heat.

With the remaining sauté, cook the grated green plantains by adding broth and water, cooking over low heat until a golden dough forms.

To assemble the dish, spread banana leaves and place the green plantain dough, then add the fish.

Wrap and steam for thirty minutes.

Ingredients

1 kilogram of Albacore or dorado fish fillet

8 Green plantains

1 Red onion

1 Green pepper

2 Garlic cloves

2 Tomatoes

3 Lemons

1 cup of Peanut paste

1 cup of Broth

2 cups of Water

Banana leaves for wrapping

Salt, pepper, cilantro, and cumin

Step 1 : To prepare this delicious dish, start by slicing the onion and pepper into thin rounds, dice the tomatoes, and grate the green plantains.

Step 2 : In a skillet with hot oil, sauté the onions and pepper, then add the garlic.

Step 3 : Add the tomato and season with salt, pepper, and cumin, cooking for 10 minutes.

Step 4 : Then divide the preparation into two bowls.

Step 5 : Season the fish fillets with lemon juice and set aside.

Step 6 : In a saucepan, place the fillets with half of the sauté and peanut paste, letting them rest off the heat.
