Ecuadorian Chicken Stew

Ingredients

1 ½ kilogram of Chicken

8 Tomatoes

2 Green bell pepper

1 Onion

3 Garlic cloves

250 grams of Naranjilla juice

1 Concentrated chicken broth cube

Fresh cilantro

Vegetable oil

Garlic powder

Sweet paprika

Ground cumin

Black pepper

1 pinch of Salt

Preparation

Step 1 : Wash and chop the vegetables into large pieces.

Step 2 : Remove the stems from the tomatoes and peppers.

Step 3 : Finely chop the bunch of cilantro.

Step 4 : In a processor or blender, place the onion, garlic, tomatoes, green peppers, the concentrated broth cube, 1 teaspoon of ground cumin, 2 teaspoons of aji, and 1 teaspoon of sweet paprika. Add salt and pepper to taste. Blend well until smooth.

Step 5 : Meanwhile, clean the chicken by removing skin and fat, then cut into pieces. Season with garlic, salt, and pepper to taste.

Step 6 : In a pot, heat about 5 tablespoons of vegetable oil and add the chicken to sear. Once all pieces are browned, remove and set aside.

Step 7 : In the same pot, sauté everything that was blended, letting the liquid evaporate and leaving just the sofrito.

Step 8 : Add the chicken back into the pot along with the naranjilla juice and stir everything. Then, add enough water to cover the chicken halfway.

Step 9 : Add the cilantro, stir, and cook on high heat for 20 minutes.

Step 10 : Before serving, let rest for 15 minutes.
