Ingredients

2 kilograms of Chicken breasts

2 cups of Uncooked rice

4 Fried ripe plantains

1 Diced onion

4 Diced tomatoes

1 Diced bell pepper

2 Diced carrots

1 cup of Beans

4 Garlic cloves

2 Chopped green onions

1 tablespoon of Annatto (achiote)

1 tablespoon of Cumin

1 cup of White wine

2 cups of Water

1 pinch of Salt

1 pinch of Pepper

Step 1 : To prepare this recipe, the chicken breasts should be seasoned with a blend of spices.

Step 2 : Then, they are placed in a pan with hot oil, skin side down, and cooked until golden.

Step 3 : Next, onion, tomatoes, and bell pepper are added to the pan, cooking everything for about 15 minutes.

Step 4 : Add the white wine and cook until the liquid reduces by half.

Step 5 : Then, water, rice, beans, and carrots are added, cooking over medium heat until the rice is done.

Step 6 : Finally, serve the chicken and rice accompanied by fried ripe plantains.
