Chanfaina
Ingredients
2 pounds of Pork, goat, or beef entrails
2 pounds of Small potatoes
2 cups of Cooked rice
1 Crushed garlic head
2 Red onions (paiteña)
½ teaspoon of Ground cumin
½ teaspoon of Ground pepper
½ cup of Finely chopped white onion
2 tablespoons of Finely chopped parsley
2 tablespoons of Colored lard (manteca con color)
1 tablespoon of Pork fat (manteca de chancho)
1 pinch of Salt
Preparation
Step 1 : To prepare this recipe, begin by boiling the potatoes with salt until tender.
Step 2 : Then, dice both the intestines and potatoes into small pieces.
Step 3 : Next, make a sofrito with colored lard, pork fat, sliced onion, spices for seasoning, garlic, and salt.
Step 4 : Once the onion is soft, add a cup of water and let it boil.
Step 5 : Subsequently, add the chopped entrails and stir well, keeping it on low heat until well seasoned.
Step 6 : Then, incorporate the halved potatoes, cooked rice, and white onion, mixing everything gently.
Step 7 : Finally, add the chopped parsley and remove the chanfaina from the heat for serving.
