Caucara

The Caucara is a hearty dish, made with tough beef, originating from Ecuador. It is seasoned with salt, cumin, pepper, garlic, and achiote oil, then cooked until tender. It is served with salad, avocado, and bread rolls.

The meat is cut into cubes and seasoning with spices.

Cooked slowly over low heat for 15 minutes.

Serve with beetroot and carrot salad.

Ingredients

2 kilograms of Beef

5 Garlic cloves

1 cup of Water

6 tablespoons of Achiote oil

3 tablespoons of Salt

10 tablespoons of Pork fat

2 teaspoons of Pepper

1 teaspoon of Cumin

300 grams of Cooked beetroot

300 grams of Cooked carrot

1 tablespoon of Lemon juice

300 grams of Shredded lettuce

Preparation

Step 1 : The meat is washed, cut into cubes, and seasoned with salt, cumin, pepper, crushed garlic, and achiote oil.

Step 2 : Cook in a pot with 1 cup of water for 15 minutes until tender.

Step 3 : Remove from heat and set aside for 5 minutes.

Step 4 : In a saucepan, heat the pork fat over low heat, then add the meat and fry for 4 minutes.

Step 5 : Wash the beets and carrots, cut into small cubes, and mix with salt, lemon juice, and shredded lettuce to make the salad.

Step 6 : Serve the meat along with the salad, avocado, and bread rolls.
