Cabbage Leaf Rice Tamal

Ingredients

1 kilogram of Lean pork meat

3 tablespoons of Herbs and spices

3 Green onions

2 Crushed garlic cloves

30 milliliters of Annatto seed oil

250 grams of Toasted peanut

500 milliliters of Milk

½ cup of Cream

3 cups of Cooked white rice

3 tablespoons of Chopped parsley

2 Tomato slices

Salt, pepper, and cumin

Preparation

Step 1 : In a pot with water, cook the pork with a chopped onion, garlic, herbs, salt, cumin, and a little pepper, boiling for about 30 minutes until the meat is tender.

Step 2 : Then remove the meat, let it cool, and shred it, setting it aside.

Step 3 : For the peanut sauce, heat annatto seed oil in a skillet and sauté two julienned onions until translucent.

Step 4 : Add the previously blended peanut with milk and cream, seasoning with salt and pepper.

Step 5 : Allow to cool.

Step 6 : For the filling, place the shredded meat in a bowl and mix with half a cup of peanut sauce.

Step 7 : For the dough, put the cooked rice in a bowl and add eggs and grated cheese, incorporating a little salt and mixing until a homogeneous dough forms.

Step 8 : Carefully detach the cabbage leaves, wash them well, and steam for about 4 minutes until soft.

Step 9 : Place a portion of the rice dough on a cabbage leaf, then add a bit of the meat and peanut sauce filling, garnishing with a tomato slice and chopped parsley.

Step 10 : Fold the cabbage leaf to form the tamal.

Step 11 : Place the tamales in a skillet, add some pork broth, sprinkle with herbs, and cook covered for about 20 minutes.

Step 12 : Serve the tamales drizzled with peanut sauce, accompanied by plantains and pickled onions.
