It is made by cooking rice with cinnamon, clove, and sweet pepper, which absorb the spice flavors, creating a unique combination.

Rice Chicha
Ingredients
1 liter of Milk
1 cup of Rice, soaked a day before
½ liter of Water
Sweet pepper
Ground cinnamon
Sweet cloves
Vanilla
Panela or sugar
Preparation
Step 1 : In a pot, place half a liter of water and bring to a boil.
Step 2 : Add the rice and spices: cinnamon stick, sweet pepper, and sweet cloves.
Step 3 : Stir constantly for 25 minutes to prevent the rice from sticking.
Step 4 : If the rice starts to dry out, add more water as needed until it is cooked, approximately 15 to 20 minutes.
Step 5 : Remove the pot from heat and discard the spices, letting the rice absorb the flavors of cinnamon, clove, and sweet pepper.
Step 6 : Transfer the rice into a blender along with the milk.
Step 7 : First blend at low speed, then at high speed.
Step 8 : Strain the mixture and return it to the pot for 10 minutes.
Step 9 : Add vanilla and panela or sugar.
Step 10 : Optionally, add a pinch of salt and nutmeg.
Step 11 : Heat the mixture for 10 minutes and let it cool.
Step 12 : Serve with crushed ice and a pinch of ground cinnamon.
