Colada Morada
Ingredients
2 liters of Cold water
4 Cinnamon sticks
8 Cloves
Lemon peel
Orange peel
Pineapple peel
½ cup of Granulated sugar
½ cup of Panela (or piloncillo)
2 Bay leaves
½ teaspoon of Dried lemon verbena
¼ kilogram of Mortiños (or blue indigo berry)
¼ kilogram of Blackberries
½ teaspoon of Ground allspice
1 cup of Naranjilla pulp
¼ cup of Cornstarch dissolved in a little water
1 cup of Pineapple cut into cubes
½ cup of Strawberries (or fresh berries) sliced
½ cup of Babaco sliced
Preparation
Step 1 : In a large pot, place 1 liter of water, cinnamon, cloves, lemon peel, orange peel, pineapple peel, sugar, and panela.
Step 2 : Bring to a boil for 20 minutes.
Step 3 : Turn off the heat, add bay leaves and lemon verbena, cover and let rest for 5 minutes.
Step 4 : Strain the liquid and return it to the large pot.
Step 5 : In another pot, put the remaining liter of water, mortiños, blackberries, and ground allspice, and boil for 30 minutes.
Step 6 : Remove from heat, blend this mixture with the naranjilla, and strain to remove seeds.
Step 7 : Add the blended mixture to the other pot with the spice-infused liquid.
Step 8 : Add the dissolved cornstarch, stir constantly, and wait for it to boil.
Step 9 : Then add the pineapple and cook for another 10 minutes.
Step 10 : Add the strawberries and babaco, wait for it to boil again, and remove from heat.
Step 11 : Colada Morada can be served warm or refrigerated to enjoy cold.
