Ingredients

1 cup of Corn flour
1 cup of Wheat flour
1 cup of Raisins
1 pound of Table cheese
1 teaspoon of Baking powder
1 cup of Margarine
½ teaspoon of Lemon zest
1 teaspoon of Vanilla essence
1 cup of Sugar
9 Egg yolks
4 teaspoons of Aguardiente (liquor)
9 Egg whites

Preparation
Step 1 : To prepare this delicious dish, start by finely grating the table cheese.
Step 2 : Then, beat the egg whites until stiff peaks form.
Step 3 : Next, beat the margarine, adding alternately the sugar and egg yolks until you get a creamy mixture.
Step 4 : Sift the flours with the baking powder and add to the mixture.
Step 5 : Then, add the cheese, liquor, lemon zest, raisins, and flour to the mixture and beat until smooth.
Step 6 : Incorporate the beaten egg whites into the previous mixture carefully.
Step 7 : Place several spoonfuls of batter in the center of each achira leaf.
Step 8 : For decoration, add raisins on top and then fold the achira leaf to enclose the filling.
Step 9 : Steam in a tamal steamer for about 30 minutes or until firm.
Step 10 : Serve this dish with a delicious hot coffee.
