Pineapple Jam
Ingredients
1 Whole ripe pineapple
½ cup of Water
½ cup of Sugar (or grated panela)
1 Cinnamon stick
3 Cloves
Juice of one lemon
Preparation
Step 1 : Peel and core the pineapple.
Step 2 : Cut half into cubes and blend the other half until pureed.
Step 3 : In a medium pot, boil water with sugar, cinnamon, and cloves.
Step 4 : Add the pineapple cubes, blended purée, and lemon juice, then reboil.
Step 5 : Lower the heat and cook over low heat, stirring occasionally, until the liquid reduces and thickens.
Step 6 : Remove from heat and let cool for 2 hours.
Step 7 : Pineapple jam can be enjoyed with bread, crepes, ice cream, or cheese.
