Pineapple Cheese

Ingredients

10 Small flan molds greased with butter

2 cups of Sugar

½ cup of Water

2 ½ cups of Fresh pineapple juice, strained and without foam

1 tablespoon of Cornstarch

1 cup of Milk

10 Eggs

1 teaspoon of Vanilla essence or extract

2 tablespoons of Rum

10 Pineapple slices

Brown sugar

Preparation

Step 1 : In a small pot, combine water with one cup of sugar and bring to a boil over high heat without stirring for 10 minutes, until the caramel begins to turn a golden color.

Step 2 : Then, remove from heat and quickly distribute the caramel into the flan molds.

Step 3 : In another small pot over low heat, mix the pineapple juice with the cornstarch and the remaining cup of sugar, bringing it to a boil and simmering for 5 minutes until it begins to thicken.

Step 4 : Remove from heat and allow to cool completely.

Step 5 : Preheat the oven to 350°F (180°C).

Step 6 : In a bowl, beat the eggs with an electric mixer at low speed, gradually adding the pineapple syrup, vanilla, milk, and rum until well combined.

Step 7 : Strain the mixture and pour into the flan molds.

Step 8 : Bake the flans in a water bath for 45 minutes, until set.

Step 9 : Remove from oven, let cool, then refrigerate for a couple of hours before serving.

Step 10 : Meanwhile, sprinkle a tablespoon of brown sugar over each pineapple slice and broil or grill until the sugar bubbles and caramelizes.

Step 11 : To unmold the flans, immerse the molds in warm water for a few minutes to help loosen the caramel and release them easily.

Step 12 : Serve each flan accompanied by a caramelized pineapple slice.
