Maduro Pie
Ingredients
½ kilogram of Wheat flour
5 tablespoons of Butter
2 ½ cups of Sugar
5 Eggs
2 teaspoons of Salt
2 cups of Panela sugar
½ cup of Water
5 Ripe plantains cut into cubes
½ cup of Grated white cheese
Preparation
Step 1 : In a bowl, beat the butter with sugar until whitening.
Step 2 : Add the 2 eggs and beat until combined and fluffy.
Step 3 : Then, sift the flour over the mixture, add salt, and mix again.
Step 4 : Cut the dough until it looks like wet sand visually.
Step 5 : Place the dough on the table, roll out and compact twice, wrap in plastic wrap, and let it rest for 1 day.
Step 6 : Preheat the oven to 350°F (180°C).
Step 7 : Remove the dough from the refrigerator and roll it out inside the plastic wrap to a thickness of 3 mm.
Step 8 : Line a removable tart pan (fits two 24 cm pans) with the dough.
Step 9 : Cut aluminum foil almost twice the length of the tart pan and line the same.
Step 10 : Place stones on top of the aluminum foil and put it in the oven.
Step 11 : Once the tart crust has cooked enough for the walls to hold and not melt, remove the weight of the stones and finish baking until the dough separates from the pan on its own (pierce any bubbles formed).
Step 12 : Remove from the oven and let the crust cool.
Step 13 : In a pot, place the panela sugar and water.
Step 14 : Cook for 10 minutes, stirring frequently, until a syrup forms.
Step 15 : Then, add the plantains and caramelize over medium heat for 45 minutes.
Step 16 : Remove from heat, add the cheese, and mix.
Step 17 : Pour the mixture into the tart shell, already with the dough, and bake at 150°C for 20 minutes.
Step 18 : Finally, serve the Maduro pie in individual portions accompanied by a cup of coffee.
