Yuca Muchines Stuffed with Meat
Ingredients
1 kilogram of Yuca
1 pound of Ground pork or beef
2 Egg yolks
2 Boiled eggs
1 Chopped red onion (paiteña)
2 tablespoons of Chopped parsley
2 tablespoons of Chopped cilantro
Ground cumin
Vegetable oil for frying
Achiote
1 pinch of Salt
Preparation
Step 1 : Peel, chop, and grate the yuca, then let it drain to remove excess liquid.
Step 2 : Add salt, two egg yolks, and achiote to give it color.
Step 3 : In another container, prepare a sauté with onion, parsley, and cilantro, then add the seasoned ground meat with salt and cumin, and cook until ready.
Step 4 : Then, add a bit of water and cook until it evaporates.
Step 5 : Next, fry it again in oil.
Step 6 : Take portions of the dough and make a hole in the center to incorporate the meat and pieces of boiled egg.
Step 7 : Shape the stuffed dough into oval forms and fry in vegetable oil.
