Pork Leg
Ingredients
8 pounds of Boneless, skinless pork leg
6 Crushed garlic cloves
2 tablespoons of Ground cumin
½ cup of Red onion (paiteña)
2 tablespoons of Achiote paste
2 tablespoons of Lemon juice
2 tablespoons of Oregano
2 tablespoons of Ground pepper
1 liter of Chicha or beer
1 pinch of Salt

Preparation
Step 1 : The meat should be free of excess fat, then rubbed with lemon juice and 2 tablespoons of salt, and left to rest for 2 hours.
Step 2 : In a blender, mix cumin, achiote, garlic, oregano, salt, ají, red onion, and water, blending for 4 minutes until a paste forms.
Step 3 : Then, tie the meat with kitchen twine, giving it a round shape.
Step 4 : Pierce with a knife and rub with the prepared mixture, making sure to insert the seasoning into the cuts.
Step 5 : Bake covered with aluminum foil at 200°C for 2 hours (or longer depending on the weight of the leg).
Step 6 : To check for doneness, insert a skewer; the juices that come out should be clear.
Step 7 : Then remove the foil and let it brown for 20 minutes.
Step 8 : Finally, serve with potato tortillas, avocado, lime, and lettuce.
