4 Green plantains
Oil for frying
1 pinch of Salt
Crushed or ground garlic
Preparation
Step 1 : The preparation of the patacones starts by peeling the plantains and cutting them into thick slices, either straight or diagonal.
Step 2 : Next, heat the oil over medium heat in a skillet, making sure the oil amount covers the plantain slices.
Step 3 : Fry the plantains until they start turning yellow, avoiding over-browning.
Step 4 : Once ready, remove the plantain slices from the skillet and flatten them using an implement such as a pataconera, tostonera, mortar, or the bottom of a glass.
Step 5 : Then, sprinkle with salt and garlic, and fry again for about 2 more minutes until they are fully golden and crispy.
Step 6 : Finally, remove the patacones from the skillet and add more salt if needed.
Step 7 : Serve hot accompanied by ají or some salsa, to enjoy these delicious patacones.
