Ingredients
25 Black shells
3 Grated garlic cloves
1 cup of Julienned Paiteña onion
1 cup of Diced tomato
1 tablespoon of Chopped cilantro
1 tablespoon of Chopped parsley
1 tablespoon of Chillangua chopped
½ cup of Vegetable oil
2 Lemons
Salt, pepper, and cumin
Preparation
Step 1 : The black shells should be washed and thoroughly cleaned before starting.
Step 2 : In a bowl, prepare the sauce for the shells by combining oil, garlic, cilantro, parsley, chillangua, and lemon juice.
Step 3 : Season with salt, pepper, and a pinch of cumin, making sure to mix all ingredients well.
Step 4 : For the pickle, mix the Paiteña onion, tomato, cilantro, salt, pepper, and lemon juice in a bowl, ensuring all ingredients are combined evenly.
Step 5 : Reserve this mixture to accompany the shells.
Step 6 : Heat the grill while preparing to open the shells with a guillotine or knife.
