Green plantain empanadas stuffed with shrimp
Ingredients
4 Green plantains
250 grams of Shrimp
1 Medium red onion
1 Green pepper
2 Garlic cloves
1 teaspoon of Butter or cream
1 Egg yolk
1 tablespoon of Chopped cilantro
1 tablespoon of Chopped parsley
½ cup of Milk
1 tablespoon of Peanut paste
2 tablespoons of Achiote oil
Salt, pepper, and cumin
Preparation
Step 1 : First, clean the shrimp by removing the heads, shells, and internal veins, then cut them into cubes.
Step 2 : In a skillet with a little achiote oil, sauté the onion and pepper cut into juliennes, along with crushed garlic, peanut paste, parsley, cilantro, and the shrimp.
Step 3 : Season this mixture with salt, pepper, and a pinch of cumin, and cook for about 3 minutes until it becomes creamy. Then, set aside and let it cool.
Step 4 : Meanwhile, peel the plantains and cook them in water with a bit of salt until tender.
Step 5 : Once cooked, drain and mash to obtain the dough.
Step 6 : After letting the dough rest, add the beaten egg, butter, and a pinch of salt, and knead all the ingredients together.
Step 7 : Form dough balls that are carefully rolled out on plastic wrap greased with oil, then place a portion of shrimp filling on each, folding the empanada to seal the edges.
Step 8 : Fry the empanadas in hot oil until golden brown.
Step 9 : Serve hot and ready to enjoy.
