Meanwhile, a mixture of onion, tomato, peppers, and cilantro is prepared with lime and salt.
Finally, all is combined with the fish and served with plantain chips or tostones.

Fish Ceviche
Ingredients
1 kilogram of Fresh fish
2 Red onions
4 Tomatoes
2 Green or red peppers
200 milliliters of Lime juice
1 A handful of cilantro
Salt and oil
Preparation
Step 1 : The fish is thoroughly cleaned and cut into medium-sized cubes.
Step 2 : Finely chop the onions, tomatoes, peppers, and cilantro.
Step 3 : In a bowl, place the fish with half of the lime juice, ensuring the liquid completely covers the fish.
Step 4 : Add a pinch of salt and cover the bowl, then refrigerate for about 3 or 4 hours so the acidity of the lime "cooks" the fish.
Step 5 : One hour before serving, mix in another bowl the onions, tomatoes, peppers, and cilantro with the remaining lime juice.
Step 6 : Add another pinch of salt and refrigerate for approximately one hour.
Step 7 : After the resting time, remove the fish from the fridge and drain the lime juice.
Step 8 : Mix the fish with the prepared onion, tomato, pepper, and cilantro mixture.
Step 9 : Add salt and oil to taste, mix well, and serve the ceviche accompanied by plantain chips, tostones, or toasted maize (chulpi).
