Ingredients

1 kilogram of Very fresh fish

2 Red onions

4 Tomatoes

2 Green or red peppers

200 milliliters of Lemon juice

1 Cilantro bunch

Salt and oil

Preparation

Step 1 : The fish is thoroughly cleaned and cut into medium-sized cubes.

Step 2 : Finely chop the onions, tomatoes, peppers, and cilantro.

Step 3 : In a bowl, place the fish with half of the lemon juice, ensuring the liquid covers the fish completely.

Step 4 : Add a pinch of salt and cover the bowl, then refrigerate for about 3 or 4 hours to let the lemon acid "cook" the fish.

Step 5 : One hour before serving, mix in another bowl the onions, tomatoes, peppers, and cilantro with the remaining lemon juice.

Step 6 : Add another pinch of salt and keep refrigerated for about an hour.

Step 7 : After the resting time, remove the fish from the refrigerator and drain the lemon juice.

Step 8 : Mix the fish with the prepared onion, tomato, pepper, and cilantro mixture.

Step 9 : Add salt and oil to taste, mix well, and serve the ceviche accompanied by chifles, plantains, or toasted maize.
