Ecuadorian Green Plantain Tortilla
Ingredients
8 Green plantains
3 tablespoons of Butter
1 Chopped scallion stalk
200 grams of Crumbled fresh cheese
Oil
1 pinch of Salt
Preparation
Step 1 : Wash the plantains and remove the peel.
Step 2 : Cook them in water with a pinch of salt until tender.
Step 3 : Then, mash the cooked plantains and mix with butter and salt to taste.
Step 4 : In a separate bowl, combine the onion and cheese to prepare the filling.
Step 5 : Shape the tortillas and fill them with the mixture above.
Step 6 : Fry the tortillas in a skillet with a little oil until golden.
Step 7 : Serve accompanied by onion and tomato pickles, along with a coastal chili sauce.
