Corn Empanadas
Ingredients
½ pound of Raw corn flour
½ pound of Pre-cooked corn flour
1 pound of Ground beef or pork
4 cups of Water
2 Egg yolks
2 tablespoons of Chopped white onion
4 tablespoons of Oil or lard
1 Crushed and finely chopped garlic
½ cup of Cooked fresh peas
1 Hard-boiled chopped egg
Salt, pepper, and cumin
Preparation
Step 1 : To begin, sift the flour.
Step 2 : Then, in a deep pan or skillet, add water and salt, and bring to a boil.
Step 3 : At this point, add all the flour and cook until a crust forms on the bottom and the dough separates properly.
Step 4 : Once ready, remove from heat and let cool slightly.
Step 5 : Next, add the egg yolks to the dough and knead well.
Step 6 : It's important to let the dough rest for about 20 minutes.
Step 7 : Meanwhile, sauté the onion and garlic until transparent.
Step 8 : Subsequently, add the meat, peas, and season to taste with salt, pepper, and cumin.
Step 9 : Cook for approximately 5 minutes, stirring constantly.
Step 10 : Finally, add the egg, mix well, and remove from heat.
Step 11 : To assemble the empanadas, take a small ball of dough and flatten it on plastic.
Step 12 : Then, fill with the previously prepared meat mixture.
Step 13 : Finally, fry the empanadas in plenty of hot oil until golden and ready to enjoy.
