Ingredients

4 cups of Cooked chochos

100 milliliters of Lime juice

50 milliliters of Orange juice

1 Red onion sliced thinly

3 Diced tomatoes

1 Bunch of finely chopped cilantro

½ cup of Tomato sauce or juice

2 tablespoons of Olive oil

1 pinch of Salt

Preparation

Step 1 : To prepare the chochos ceviche, start by placing the red onion in a bowl, sprinkle with salt, then cover with warm water and let soak for 10 minutes.

Step 2 : Next, drain the water and rinse the onions with cold water.

Step 3 : Then, mix the onion, tomatoes, chochos, tomato sauce, cilantro, lime juice, orange juice, oil, and salt in a container.

Step 4 : Let the ceviche marinate in the refrigerator for a couple of hours so the flavors blend properly.

Step 5 : Finally, serve the ceviche very cold and can be accompanied with toasted corn (chulpi), plantain chips, avocado, or criollo chili, according to each person's taste.
