Ingredients

16 Chicken wings

6 Garlic cloves

½ Onion

2 Yellow peppers

½ teaspoon of Cumin

1 teaspoon of Oregano

2 tablespoons of Rosemary

2 tablespoons of Culantro

½ cup of Huacatay leaves

½ cup of Vinegar

2 tablespoons of Tomato paste

100 grams of Wheat flour

200 grams of Fresh cheese

6 Soda crackers

½ cup of Toasted maní

¾ cup of Chicken broth

1 pinch of Salt

1 pinch of Pepper

Preparation

Step 1 : To prepare the chicken wings, start by cutting off the tips and washing them thoroughly.

Step 2 : Then, place the wings in a bowl with the crushed garlic, oregano, rosemary, culantro, vinegar, and tomato paste.

Step 3 : Season with salt, pepper, and cumin, then mix everything and cover the bowl with plastic wrap.

Step 4 : Let this mixture marinate in the refrigerator for approximately two hours.

Step 5 : Once the time has passed, coat the wings with wheat flour and fry them in hot oil.

Step 6 : For the huacatay sauce, in a skillet with oil, sauté chopped onion along with yellow peppers and a bit of garlic.

Step 7 : Add maní and huacatay leaves as well.

Step 8 : In a blender, blend the sautéed mixture with fresh cheese, crackers, salt, pepper, and a little chicken broth.

Step 9 : Blend until obtaining a slightly thick mixture.

Step 10 : Finally, serve the chicken wings accompanied by the huacatay sauce and lettuce.
