Ecuador, as well as many other Latin American countries, solidified their cuisine by blending it with European elements during the colonization period, a time when great dishes like Churrasco were born.

History of the Dish

This culinary element is very "elusive" over the course of history, as there is no specific date that explains its creation.

Nevertheless, some historians suggest that the dish originated approximately in the 15th century, although others believe it was being prepared a little earlier, or that, at most, it was a prototype of what is now known as churrasco.

But what is certain is that it was first prepared in regions of Chile and Argentina. Featuring Europeans as the main characters, who brought beef and cattle to the continent.

Thanks to this, the natives devised different dishes, and it was from here that Ecuadorian churrasco would emerge—so liked by the colonizers that it became one of the most frequently prepared foods in regions of Portugal and Spain.

Contrary to what one might think, Churrasco is not only prepared in Ecuador, but it is also appreciated in other countries. Although they may not call it one of their typical dishes, it is present in certain social gatherings.

For example, in Colombia, this dish is very well regarded. Made with the classic steak, seasoned with a bit of vinegar, parsley, oil, onion, and garlic.

While in Río de la Plata regions such as Argentina, it is also prepared with any type of meat, and besides onion, it is often served with chimichurri.

On the other hand, in Mexico, a basic version of churrasco is prepared, which differs from the Ecuadorian one only because it is served with a little guacamole.

And finally, in Chile, the churrasco is accompanied by mayonnaise, tomato, bread, and avocado.
